The Fluffiest Paleo Blueberry Muffins

These muffins blow me away every time I take a bite! They're fluffy, super flavorful,

and are so easy to whip up and make! I promise you will never look for another blueberry muffin recipe again. ;)

The Fluffiest Paleo Blueberry Muffins



Makes 1 dozen muffins

Ingredients:

- 2 1/2 cups blanched almond flour* - 1 tbsp coconut flour - 1 1/2 tsp baking powder - 2 tsp cinnamon - 1/4 tsp salt - 1/3 cup coconut oil, melted - 1/3 cup milk of choice - 3 pasture-raised eggs - 1/2 tsp vanilla extract - 1/4 cup pure maple syrup - 2 cups blueberries, fresh or frozen

Instructions:

1. Preheat oven to 350°F, and generously grease a muffin tin - or line the tin with cupcake liners.

2. If using frozen blueberries, then let them thaw in hot tap water until you need to use them. Make sure the water isn’t boiling though!

3. In a large mixing bowl, stir together all dry ingredients until combined.

4. After coconut oil is melted, pour into dry ingredients, and add in all the other wet ingredients, except blueberries.

5. After the batter is well mixed, then add in 1 + 3/4 cup of blueberries (save some to top off the muffins!) Gently mix to incorporate.

6. Pour batter into muffin tins, until it makes 12 muffins. Top with extra blueberries, and bake for 20-25 minutes. (I found that the sweet spot is 25 minutes!) . 7. Let them cool for about 5 minutes before popping out of tin. Slather in grass-fed butter (or natural peanut butter. And enjoy!




NOTES:


1. You can substitute that extra half cup of almond flour for cassava flour for extra fluffy muffins, but take out the coconut flour if you do.
