The 4-Ingredient Peanut Butter Cookies

Chewy, soft, and oh-so peanut buttery! These cookies are such a delight for all, and only require 4 MAIN INGREDIENTS to make! You'll love these when you're in need of a quick and easy treat to whip together!


Let's be honest with ourselves. Who doesn't like a good, old-fashioned, fresh-out-of-the-oven peanut butter cookie? They're a family favorite for all, and just too delicious when paired with a tall glass of fresh, raw milk! (See picture below!)

What's great about these cookies is how they require such minimal ingredients, and are flourless! Somedays, that craving for a cookie just strikes, but you have no almond, coconut, or fill-in-the-blank paleo flour on-hand. BUT, chances are, you have a big jar of peanut butter! That's when these cookies come to the rescue!



Also, another great thing about these cookies is that they're gluten-free, refined sugar-free, and require no whipping, sifting, or anything of that sort! You seriously just plop all the ingredients in a bowl, stir them together, scoop them onto a baking sheet, press them down with a fork, bake, and DEVOUR! Easy-peasy.



Okay, one last serving suggestion. Make your very own peanut butter cookie sandwiches! Fill them with just straight peanut butter, or fill them with some peanut butter mixed with a dash of sweetener, and a splash of vanilla! Either way is divine, and equally fun! Get creative, and enjoy!

The 4-Ingredient Peanut Butter Cookies


- Serves 10-12 cookies -


INGREDIENTS:

  • 1 cup of natural, no-sugar added peanut butter, stirred and chilled* (see note)

  • 1 pasture-raised egg

  • 1/4-1/3 cup of local, raw honey

  • 1 tsp vanilla extract

  • A pinch of salt (optional)

  • Flaky sea salt for topping (optional)


INSTRUCTIONS:


  1. Preheat your oven to 350°F, and line a baking sheet with parchment paper or a baking mat.

  2. Mix all your ingredients together, and spoon tablespoon-sized pieces onto your pan, then press each cookie down with a fork to get that classic peanut butter cookie look.

  3. Bake for 8-12 minutes, checking on them often since they go from not-quite-baked to nearly burnt within a minute or two!

  4. Let the cookies cool, and sprinkle with optional flaky sea salt, or drizzle with paleo chocolate! ENJOY!



NOTES:

1. Make sure when you go to use your peanut butter for this, the natural oil separation that occurs is completely stirred in! If your peanut butter hasn't been stirred well beforehand, the cookies turn out super oily, dense, and rubbery. Not good! So, for the best results, stir your peanut butter really well, and chill it upside down (yes, you heard right!) in the fridge for a few hours. :)
