Peanut Butter-Stuffed Cookie Sandwich
A crisp, nutty cookie stuffed with luscious, natural peanut butter! This treat is a peanut butter-lover's dream come true!

If you love peanut butter, then let me tell you! you'd absolutely love these! Prepare to have a glass of milk nearby, because these rich, peanut buttery treats will for sure need it! ;) Recipe below!
Peanut Butter-Stuffed Cookie Sandwich
- Yields 6-7 sandwiches -
INGREDIENTS:
1 cup natural, no sugar added peanut butter
1 pasture-raised egg
1/3 cup Lakanto Monk Fruit Sweetener
1 tsp blackstrap molasses (optional, if you want it totally sugar-free)
1 tsp vanilla extract
4 Tbsp grass-fed butter, soft
2 Tbsp coconut flour
1 tsp baking soda
1/2 tsp baking powder
Himalayan pink salt to taste
INSTRUCTIONS:
1. Preheat oven to 350°F, and line your baking sheet with a baking mat or parchment paper.
2. Beat together your peanut butter, butter, sweetener, vanilla and egg. Once that’s combined, add in all your dry ingredients and mix.
3. Once a dough has formed, take tablespoon-sized pieces of dough and put them on your baking sheet. Press each ball of dough down with a fork to get the classic peanut butter cookie design.
4. Bake for 10-11 minutes, or until they just start to brown around the edges. Let them cool before stuffing!
5. Once they've cooled for a bit, you can stuff them with plain peanut butter, or make a sweetened peanut butter filling:
6. To make a sweetened filling, I usually just take the peanut butter and add a splash of real maple syrup or raw honey, and a dash of vanilla extract! Mix that together and slather it on cooled cookies!
