Paleo Peanut Butter Cups

  • 8-9 oz dark chocolate, or paleo dark chocolate - I made homemade, paleo kind

  • Coconut oil - optional, but may be needed

  • Natural, no sugar-added peanut butter

  • 2 Tbsp organic maple syrup (more if desired)

  • 1-2 tsp vanilla extract

  • Salt, to taste

1. Melt together your dark chocolate, a pinch of salt and some vanilla. If it’s too thick, add some coconut oil and mix until it’s thinned-out. No need for it to be soup-like, a thick, caramel-like texture is great!

2. Pour a smidgen of this chocolate mixture into the bottom of mini cupcake liners, or into a silicon candy mold. Freeze this while you do next step!

3. Mix together about 1/2 cup or so of peanut butter, some vanilla, maple syrup, and salt. Once a thick peanut butter paste has formed, take teaspoon-sized amounts of this peanut butter dough, roll it into a ball, and press it down a bit to flatten. Place each piece of dough in the center of your chilled chocolate candy bottom.

4. Pour more chocolate on top until your mold/liner is full, and top with flakey sea salt (optional!) Freeze for about 30 minutes. Once done, pop out and enjoy! 😊
