No-Churn, Peanut Butter Chocolate Chunk Ice Cream

Yep, you heard right: This peanut butter deliciousness is totally no-churn, and completely sugar-free! It's easy and fast to whip up, and within a few hours, it'll be all yours to dig into!

It's also the best of both world's: peanut butter and chocolate! You can never go wrong with that combo, can you?

So, get your ice cream game on with this yummy recipe--you'll thank me later! Oh! And don't forget to top it with plenty of chocolate sauce! ;)
No-Churn, Peanut Butter Chocolate Chunk Ice Cream
INGREDIENTS:
2 cups heavy cream, chilled
1/2 cup *granulated* sweetener of choice - add more if needed
1 tsp vanilla extract
1 cup natural peanut butter, softened - add more if needed
Dark chocolate, melted
INSTRUCTIONS:
1. Mix together your peanut butter and sweetener, then in 30-second bursts in the microwave, melt that together until smooth — be sure not to burn it! Set aside to cool completely.
2. Beat your *cooled* heavy cream and vanilla with an electric mixer using the whisk attachment, on high speed until stiff peaks form.
3. Fold your *now cooled* peanut butter mixture into your whipped cream, and mix to combine.
4. Take some melted (but cooled!) dark chocolate and swirl it into your heavy cream mixture.
5. In a freezer-safe container, freeze this for at least 6 hours, or until it’s firm. Enjoy!
