Kid-Approved Healthy Peanut Butter Cookies
These cookies whip up in minutes, require no chilling, and are so darn tasty, even kids approve!

I’ve been on a cookie roll these past few days, but I’m justified considering all of these batches have been going out to friends/being shared with friends! ;)

If you’re having one of those days where you just need a peanut butter cookie (that's me everyday!) and you're looking for an easy yet delicious, kid-approved (Paleo) Peanut Butter Cookie, then here's the perfect recipe for you! Happy baking!
Kid-Approved Healthy Peanut Butter Cookies
- Yields about 18 small(ish) cookies -
INGREDIENTS:
1 cup natural peanut butter
1/4 cup grass-fed butter, softened
1 egg
1/3 cup coconut sugar
3 Tbsp maple syrup or honey
1 tsp vanilla extract
1 cup blanched almond flour
1/4 cup tapioca flour
1/4 cup coconut flour
1/2 tsp salt
1 tsp baking soda
Dark chocolate chips (optional)
INSTRUCTIONS:
1. Preheat oven to 350°F. Prepare and line your baking sheet with parchment paper or a baking mat.
2. Beat together your peanut butter, butter, egg, sweeteners and vanilla. Beat this until combined.
3. Next, sift in all of your dry ingredients, and mix well until a thick dough forms. Add in your chocolate chips, if desired.
4. Take heaping teaspoon-sized pieces of dough, roll into a ball, and place on your baking mat. Press down with a fork each direction to get that classic peanut butter cookie look. 😍
5. Bake for 10-12 minutes, or until *lightly* golden brown on top. Let cool for a few minutes, then enjoy! 💛🥜🍪
