Fudgy Mint Brownie Chia Pudding

Thick, luscious, minty and chocolate-y! This chia pudding is so darn good you'll think you're eating a dessert!

This AMAZING Fudgy Mint Brownie chia pudding is layered like a trifle cake, and is basically like a dessert for breakfast! But, you can easily make healthy substitutes to make it low in sugar, and high in healthy fats and protein! Soooo, healthy AND tastes like a dessert?? Count me in!

So, to get the fluffy brownie/cake pieces in this, I literally whipped up a super simple, microwave mug cake! It turned out delish, so I'll post the recipe I used for it down there, too.

So, if you're just as excited as me about this recipe, I'm sure you're already holding in-hand your chia seeds, coconut milk, and microwave brownie! So, let's get bakin'!




Fudgy Mint Brownie Chia Pudding

- Yields one serving of chia pudding -


  • 4 Tbsp chia seeds

  • 1/2 cup organic, full-fat canned coconut milk

  • 1/4 cup + 2 Tbsp plain almond milk

  • A splash of vanilla extract

  • Stevia, to taste (or raw honey, real maple syrup, or sweetener of choice)

  • A pinch of salt


  • 1/4 - 1/2 tsp peppermint extract

  • Some paleo brownie chunks

  • 2 Tbsp cocoa powder

  • Grass-fed collagen (optional)


  1. Add in your peppermint extract and cocoa powder to your chia pudding base. Cover and set in fridge to thicken for about 2-3 hours. Once thickened, layer with chunks of paleo brownie, dark chocolate drizzle, and garnish with fresh mint leaves!

For the easy microwave brownie:

  • 1 1/2 Tbsp avocado oil

  • 1 pasture-raised egg

  • 1 Tbsp maple syrup (more if needed)

  • 2 Tbsp almond flour

  • 1/2 Tbsp coconut flour

  • 1 1/2 tsp cocoa powder

  • Pinch of salt

  • 1/2 tsp baking powder

  • Splash of plain almond milk

What to do:

  1. Mix together all the ingredients in a good-sized mug, and microwave for 1 minute and 30 seconds! Let cool.
