Fluffy Paleo Cinnamon Banana Bread

- Makes 1, 5x7 loaf -

  • 1 1/2 cups of *very ripe* banana, mashed

  • 1/4 cup organic coconut oil, melted

  • 5 large, pasture-raised eggs

  • 1 tsp vanilla extract

  • 1 1/2 cups blanched almond flour

  • 1/3 cup tapioca flour

  • 2 Tbsp organic coconut flour

  • 1 tsp ground cinnamon

  • 1/4 tsp Himalayan pink salt

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 5 drops of liquid stevia + 1 Tbsp of maple syrup (or sub 2-3 Tbsp of maple syrup.)

  • Chopped pecans (optional!)

FROSTING (not dairy-free)

  • 1, 8oz package of cream cheese, softened

  • 3-4 Tbsp of grass-fed butter, softened

  • 2-3 Tbsp of maple syrup to taste (or stevia drops!)

  • 1 tsp vanilla extract

  • 2 pinches of nutmeg for spice

  1. Preheat oven to 350°F, and line your loaf pan with parchment paper.

  2. In a medium bowl, mix together your mashed banana, coconut oil, eggs, and vanilla. And mix until incorporated.

  3. In a separate, larger bowl, mix together all your dry ingredients. And then sift your dry into your wet, and stir to combine. Add in pecans, chocolate chips, walnuts, or whatever you choose, if desired!

  4. Pour batter into parchment-lined pan, and bake in preheated oven for 1 hour, rotating the pan when it hits its halfway mark of cooking.

  5. If making the frosting, beat together the frosting ingredients, and spread on the banana bread ONCE it’s COOLED! It’ll be a melty mess otherwise.

Slice, and enjoy! Recipe adapted by me.
