Fluffy Paleo Banana Pancakes

Fluffy, banana-y, protein-filled, and yummy! These will be a new breakfast favorite!

If this picture doesn't make you want pancakes with mounds of butter and syrup, then I don't know what will! After I created these, I've seriously craved them daily! But, I have self-control, guys! ;) I make them on occasion, and when I do, it's such a treat for us all.

So, if you're looking for a yummy, filling, and absolutely delicious breakfast, then I got you! These Fluffy Paleo Banana Pancakes are too scrumptious, and will make the perfect breakfast treat!

Grab your ripe bananas, eggs, some paleo baking flours, and let's get baking!


Fluffy Paleo Banana Pancakes

- Yields 10 pancakes - INGREDIENTS:

  • 2 large and ripe bananas, mashed

  • 3 pasture-raised eggs, separated

  • 1 Tbsp almond milk

  • 1 Tbsp pure maple syrup (optional)

  • 3 Tbsp almond flour

  • 2 Tbsp coconut flour

  • 1 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1/4 tsp nutmeg

  • 1/2 tsp vanilla extract

  • Toppings of choice


  1. In a large bowl, mash your two bananas. Then, separate your 3 egg whites from the yolk.

  2. Put the yolks in the mashed bowl of bananas, and place the whites into a separate bowl. Next, with an electric hand mixer, beat the whites together until medium-stiff peaks form - about 2 minutes.

  3. Mix together your mashed bananas, yolks, vanilla, almond milk, and optional syrup. After that’s mixed, sift in all your dry ingredients, and mix till combined. Add in the fluffy egg whites, and gently fold to incorporate.

  4. Over medium low heat, melt butter. And, with heaping 1/4 cup measurements, make pancakes as you normally would. Cook for about 1-2 minutes per side, or until they're a nice golden brown and crisp.

  5. Serve with whipped cream, berries, butter, syrup, peanut butter, or whatever you choose! The options are endless!
