Easy Chocolate Chip Tahini Protein Cookies

These cookies have to be one of my favorites to date! Chewy, sweet, nutty, and SO insanely easy! You'll swoon over these for sure!



These cookies should come with a warning sign--they're THAT good! They have this

distinct bakery-style flavor in them that is just too tasty!






Another thing I love about these cookies is how I added an extra boost of collagen protein--almost 14 grams of protein per cookie, total! Now that's an impressive protein- punch!! But also, in my eyes, it justifies eating them for lunch, so that's why I like it, too - hehe! ;) Recipe below!



Easy Chocolate Chip Tahini Protein Cookies


- Makes 10 cookies -

INGREDIENTS:

  • 1 cup tahini

  • 1 cup blanched almond flour

  • 1/2 cup coconut sugar

  • 2 scoops collagen peptides

  • 1 pasture-raised egg

  • 1 tsp baking soda

  • 1 cup stevia-sweetened chocolate chunks (I used my homemade ones.)

INSTRUCTIONS:

  1. In a large mixing bowl, mix together all the ingredients! (Yep, that easy!) and chill in the fridge for 20 minutes.

  2. When they’re almost done chilling, preheat your oven to 350°F, and line a baking sheet with parchment paper/baking mat.

  3. Scoop heaping tablespoon-sized pieces of dough onto your pan, and press down slightly to flatten. Bake in oven for 9-11 minutes, or until a nice golden brown. Let them cool on a cooling rack, and ENJOY! 😋
