Chewy Paleo Chocolate-Filled Cookie Cups

Chewy, thick, and oozing with chocolate! You'll wish you had doubled the batch once you take your first bite! ;)

If you need some weekend plans, I have them for you right here! Make these Chewy Paleo Chocolate-Filled Cookie Cups! They’re such a treat, and kid-approved! (because my little brother ate like...6😂) The best part of these is the macadamia nut butter that was used for the chocolate filling! I'll link to that here because you won't want to miss out!

So, now that you're drooling all over your screen, I'll share the recipe below so you can get your hands on one of these...or two..or three! ;)


Chewy Paleo Chocolate-Filled Cookie Cups

- Makes about 15 cups -


  • 3/4 cup blanched almond flour

  • 1 Tbsp tapioca flour

  • 2 Tbsp coconut flour

  • 1/2 tsp baking soda

  • Pinch of salt

  • 1/4 cup coconut sugar

  • 3 Tbsp coconut oil, melted

  • 1 tsp vanilla extract

  • 1 large pasture-raised egg



  1. Preheat your oven to 350°F, and grease a mini muffin tin with butter or coconut oil.

  2. In a mixing bowl, stir together your dry ingredients. Then, melt your coconut oil, and add that - and all your other wet ingredients - to the bowl, and mix until a dough forms.

  3. Press tablespoon-sized pieces of dough into each mold, then, taking the scoop of a teaspoon measuring spoon, press down into each cookie in the pan to create an indent.

  4. Bake for 10 minutes, or until a beautiful golden brown!

  5. While they’re baking, mix together your filling (nut butter, cocoa powder, and coconut sugar.)

  6. When they’re done baking, re-indent the teaspoon shape into them, and allow them to cool for a minute or two. Once done, pop them out, fill with the chocolate filling, and enjoy!! 👌🏼
