Banana Cream Pie Chia Pudding

Start your day off right with this spectacular flavor-bomb of a breakfast!


Layers of vanilla bean chia pudding, spiced whipped cream, and freshly sliced bananas, this dessert is low in added sugar, high in healthy fats, and has some brain-fueling carbs to get you through your morning!



Every bite tastes like a bite of banana cream pie, and let's just say...I'm HERE for it!!



Chia pudding is seriously one of the yummiest breakfasts! It's thick, decadent, and so good for you! I love using either a mix of raw, pasture-raised milk and cream for the liquid base, or some organic, full-fat coconut milk and cream! The more healthy fats, the better, and the creamier, too!

Banana Cream Pie Chia Pudding


- Serves 3 - 4 chia pudding cups -


INGREDIENTS:

  • 3/4 cup organic chia seeds

  • 1 1/2 cup organic, full-fat canned coconut milk

  • 1 cup + 2 Tbsp unsweetened almond milk/or raw milk

  • 1 Tbsp of vanilla bean vanilla extract

  • 1-2 Tbsp raw, local honey

  • A pinch of Himalayan pink salt

  • 1-2 bananas for slicing

  • Organic, pasture-raised whipping cream

  • A dash of nutmeg and ground cinnamon


INSTRUCTIONS:

  1. In a medium-sized mixing bowl, whisk together your milks of choice, vanilla, honey, and salt. Next, whisk in your chia seeds, and continue to whisk for about a minute or two, to prevent them from clumping.

  2. Once the seeds have thickened in the milk, cover them, and let them chill in the fridge until thick and pudding-like. This'll be about 3 or so hours, depending on which milk you use. Overnight is best!

  3. Once your pudding has thickened, it's time to assemble! Beat your organic whipped cream with a dash of vanilla, honey, salt, and both spices. Beat that until it becomes whipped cream! Next, slice up as many banana slices as you'd like.

  4. Assemble by doing a layer of chia pudding, then whipped cream, then the banana slices. Continue this until your pudding cup is full! Top with a pinch of dark chocolate shavings, and DIG IN!
